Chefs Craig Flinn & Lars Willum on holiday cooking

 


So right about now, you may be wondering; is there anything you can do with turkey besides make pot pie? And as you look ahead to tomorrow night, after the festive gauntlet of eating that may have defined the past week, perhaps you'd like to leave behind the old standbys like cheese plates and cold cuts. On the other hand, a New Year's Eve spread that doesn't require three days of preparation and a 2nd mortgage on the house would be nice, too. Our guests were two chefs schooled in creative alternatives, and they brought a cornucopia of ideas and suggestions with them. Craig Flinn is the chef and proprietor of Chives Canadian Bistro in Halifax and author of two cookbooks : "Fresh & Local" and "Fresh Canadian Bistro"  Lars Willum is originally from Denmark. He's hosted the Cape Breton cable show Be My Guest, owns his own catering company Cape Breton Gourmet,  and he's a culinary chef at Allegro Grill & Deli in Sydney.
