Adam Donnelly is chef and co-owner of Segovia. His establishment was included in a recent list of Canada's 50 best restaurants by Maclean's.
And since his plates are designed to be shared. SCENE asked him to share a little more. Given the amount of time he spends in the kitchen, we asked what he listens to while prepping all that that tasty tapas.
Nature Boy by Miles Davis
I really like listening to Miles Davis in the morning or if I'm in the
restaurant alone. This song just calms my mind and cooking seems
effortless while it's playing. It's just so cool and slow, when I feel
stressed out and have a lot of work to finish, I always put this on and
pump out my prep list.
Someone Great by LCD Soundsystem This is my favourite song of all time! I listen to it in the morning while I'm prepping, or at the end of the night when I need a second wind. LCD is one of my favorite bands right now to cook to, their songs have great beats and the lyrics are awesome.
Fingers and Tongues by Elliot Brood
Elliot Brood is an amazing Canadian Band. I usually listen to this song before a busy service to get myself pumped up. The song builds up into an awesome chorus. It's off of their album Mountain Meadows, the whole album is killer - start to finish.
L.A. Woman by The Doors
I love The Doors so much. This is my favourite song by them. The song is quite long and I always end up singing and dancing about halfway through it until the end. I can't help it!
Berlin by Black Rebel Motorcycle Club
This song is from their album Baby 81, it's such a great album from start to finish. This song is on every play list I make for Segovia. I love when it comes on during service, I have to run to the back and turn it up. It gets me so pumped up and gives me energy no matter how tired and busy I am. Both Segovia and Pizzeria Gusto were included in Maclean's recent list of Canada's 50 best restaurants.
