Jane's Restaurant is anything but plain. First of all, it's located in Winnipeg's first skyscraper, the historic Union Tower on Main Street, completely refurbished and polished in grand fashion. And the chefs and wait staff, all students of the Red River College's Paterson Global Foods Institute, are offering up professional service and very creative culinary delights.
The culinary institute and residence have been in operation for two months, but Jane's Restaurant officially opened its doors just this week.
Jane's is named after Jane B. Paterson, the mother of Andrew Paterson, who is the owner of Paterson Global Foods Inc. The facility offers an enormous state-of-the-art kitchen in which the students learn and then churn out finely presented dishes for the restaurant. And it's a vast improvement over the windowless facility at the College's Notre Dame campus.
"Now we're front and centre," says Luc Jean, culinary instructor. "We have one of the most beautiful spaces in the city and it's really exciting for the students to be a part of that."
For student Jessie Cuthbert this moment is a dream come true."I always loved to cook and this is where I kinda saw myself was at Red River."
"It's awesome," says Jean. "I think there's going to be some beautiful food coming out of here. It's also exciting for the patrons to come here and watch the students getting instruction and delivering a really high calibre food."
So what kind of delights can you expect? Try house-smoked sturgeon canapés with trout caviar and chive aiolli; duck empanadas; lobster cakes with wasabi mayo and mango salsa or apple crisps with blue cheese and walnuts.
The program offers both culinary and hospitality training. While the college has offered both programs separately for years the new space allows the two to join forces. The college's president, Stephanie Forsyth, says it's a first in Canada. "There are other schools around but those tend to be focused more on culinary. They don't have the residence component at all, they don't have the state-of-the-art equipment that we have today nor do they have the ability for the public to interact with students."
Jane's Restaurant is open Tuesday through Friday for lunch and dinner. Count on a full meal ranging from $10 to $23.
