Bothwell Squeak'ers Cheese Curd
1-2 whisked eggs (I like to use Nature's Farm)
Cholula hot sauce (or tabasco)
Coconut oil (or whatever oil you prefer to fry with)
For Spicy Jam:
Put a heaping spoonful of jam into a small sauce pot on low heat with a healthy splash of the hot sauce
Let the jam melt to a syrupy consistency
In a heavy bottomed pan (preferably a small cast iron skillet) heat up about one inch of the oil to medium heat
Set up a breading station with three small bowls - one with the quinoa flour, one with the egg wash, one with the Panko
Dust the pieces of curd in the flour, then egg wash, then Panko, then repeat. (You'll need the crust to be established enough that the cheese won't leak out)
Place the Panko crusted curd in the oil and cook for about 40 seconds per side, until golden brown, then place the fritters on paper towel to get off the excess oil.
To plate, spoon the melted spicy jam into the middle of a small side plate and place three of the fritters down on top.
