Chef Ben Kramer and his team at Diversity Food Services are taking it outside. They are preparing a seven-course meal for an event called Grazing in the Field. The dinner will be held in Woodlands, MB on the grounds of the Hueging family's dairy farm on September 15.

Guests will be taken on a tour of the farm, followed by a cocktail party by the pasture, then dinner served outdoors. This unique event has been created by Dairy Farmers of Manitoba
Dairy products from the Hueging farm will form the basis of many of the dishes, along with fresh produce from nearby farms, so it's a real celebration of local food.
Kramer is well known for his passionate support for local growers and sustainable produce. So SCENE asked his to share a recipe for one of the dishes he will be preparing. He offered up his farmer's market gazpacho, which he will be serving alongside fresh mozzarella cheese from Whiteshell Dairy Foods
.Farmer's Market Gazpacho
1 cup red onions, chopped
1 cup green peppers, chopped
1 cup cucumber, chopped
1 cup peeled and chopped tomatoes
Hueging Dairies cow (Mike Grandmaison)
1 ½ tsp garlic, minced
1 ½ tsp salt
¼ tsp cayenne
1 tbsp white wine vinegar
¼ c + 2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
3 cups tomato juice
Sprig of fresh thyme
Combine and store overnight in the fridge.
Next day, remove the thyme and blend until smooth
Refrigerate until ready to serve.
