1 tbsp (15 mL) olive oil

1 sweet red pepper, diced

1 clove garlic, thinly sliced

¼ tsp (1 mL) sesame oil

2 tsp (10 mL) sesame seeds

1 tub (142 g) PC Organics Kale, Spinach and Chard

Pinch salt

Sautéed Mixed Greens

Sesame seeds and oil give this quick sauté a slightly Asian feel. Ideal served on the side of pork tenderloin, ribs or chicken. Greens are a great source of vitamin A.

In large nonstick frying pan, heat oil over medium-low heat. Add red pepper; cook, stirring occasionally, for 4 to 5 minutes or until softened. Add garlic; cook 1 minute longer.

Add sesame oil and sprinkle with sesame seeds. Increase heat to medium. Stir in greens; cook, turning with tongs, for 1 to 2 minutes or until wilted and hot. Sprinkle with salt and serve immediately.
