3 cups (750 mL) PC Blue Menu Chicken Broth

1 can (540 mL) PC Blue Menu Six Bean Medley, rinsed and drained

2 white onions, chopped

1 baking potato, peeled and cut in chunks

5 cloves garlic, peeled and smashed

8 cups (2 L) torn Swiss chard greens (about 1 lb/500 g)

1 cup (250 mL) parsley leaves with stems

1-3/4 tsp (9 mL) salt

½ tsp (2 mL) freshly ground black pepper

3 tbsp (45 mL) extra virgin olive oil

Swiss Chard Peasant Soup

Simple and hearty, this home-style soup is great on a cold day. Serve with a thick slice of wholegrain bread, perfect for dipping.

In large saucepan, combine 3 cups (750 mL) water, broth, beans, onions, potato and garlic. Bring to a boil. Reduce heat to simmer; cook uncovered for 20 minutes or until vegetables are tender. Stir in Swiss chard, parsley, salt and pepper; simmer until greens are tender, about 10 minutes.

Using immersion blender or stand blender, purée soup until smooth, leaving some texture if desired. Serve with olive oil drizzled over top.
