2 tbsp (25 mL)olive oil

1 large red onion, chopped

1 sweet red pepper, diced

1 large PC Organics Sweet Potato, peeled and cut in ½-inch (1 cm) cubes½ tsp (2 mL) salt

¼ tsp (1 mL) freshly ground black pepper

1 pkg (40 g) PC Fresh Chives, chopped

2 eggs

Sweet Potato Hash

Make this easy hash and top with over-easy eggs for a nutritious weeknight meal. Full of vitamin C and beta-carotene, sweet potato and red pepper are two of the healthiest vegetables you can eat.

In large nonstick frying pan, heat 1 tbsp (15 mL) of the oil over medium-low heat. Add onion andred pepper; cook for 4 to 6 minutes, stirring occasionally, or until softened and starting to brown.

Increase heat tomedium. Add sweet potato; cook for 4 to 5 minutes, stirring occasionally, or until potatoes start to brown. Stir in ½ cup (125 mL) water. Continue cooking for 6 to 8 minutes longer or until potatoes are tender when pierced with tip of knife. Season with half of salt and pepper. Stir in chives. Divide mixture between two plates.

Wipe pan clean with a paper towel. Add remaining 1 tbsp (15 mL) oil; heat over medium heat. Break eggs into pan; cook for 30 seconds. Sprinkle with remaining salt and pepper. Turn eggs over; cook for another 30 seconds or until cooked “over easy”. Top each plate of sweet potatoes with a fried egg.
