Using ground flax seed instead of whole makes the omega-3 more available. Sneaking it into baking, such as these peanut butter cookies, is a great way to increase your family's omega consumption, especially if they won't eat fish.

1-1/4 cups (300 mL) PC Organics Whole Wheat Flour
1/3 cup (75 mL) ground flax seed
1-1/2 tsp (7 mL) baking powder
½ cup (125 mL) PC Blue Menu Just Peanuts Smooth Peanut Butter
½ cup (125 mL) salted butter, at room temperature
1 cup (250 mL) granulated sugar
2 eggs, lightly beaten
Preheat oven to 350°F (180°C). Line baking sheet with parchment paper.
In large bowl, stir together flour, flax seed and baking powder. In another bowl, stir together peanut butter, butter and sugar until smooth; beat in eggs. Using wooden spoon, stir peanut butter mixture into dry ingredients until smooth dough forms. Drop by 2 tbsp (25 mL) amounts onto prepared baking sheet. Press down with tines of fork.
Bake in centre of oven for 12 to 14 minutes, rotating baking sheet halfway, or until starting to brown. Cool for 5 minutes on baking sheet. Transfer to wire rack to cool completely.
