Part cake and part pudding, clafouti is a French country-style dessert. You can use almost any thawed frozen or fresh tender fruit- try raspberries or cherries.

¾ cup (175 mL) 2% milk
½ cup (125 mL) PC Blue Menu Fat Free Vanilla Finesse Yogurt
3 eggs
½ cup (125 mL) granulated sugar
1/3 cup (75 mL) all-purpose flour
2 tbsp (25 mL) cornstarch
2 tsp (10 mL) finely grated orange rind
1 tsp (5 mL) vanilla
1 pkg (600 g) PC Frozen Peaches, thawed, drained and patted dry
Preheat oven to 350°F (180°C). Spray 8-inch square (2 L) glass baking dish with cooking spray.
Place milk, yogurt and eggs in blender. Purée for 20 seconds or until well-combined. Add sugar, flour, cornstarch, orange rind and vanilla; blend on full speed for 1 minute. Pour ¾ cup (175 mL) mixture or enough to cover bottom of pan with ½ inch (1 cm) batter into prepared dish.
Bake in centre of oven for 10 minutes or until mixture is set. Remove from oven. Evenly arrange peaches over baked layer. Pour remaining batter over peaches. Bake for 40 to 45 minutes or until lightly golden with a centre that jiggles slightly to the touch.
Cool for 10 minutes. Serve warm, dusted with icing sugar if desired.
