Perfectly tender-crisp and bright green colour, this side dish the perfect accompaniment to any roast dinner.
1 head broccoli, cut into florets
1 garlic clove, chopped
1/2 tsp. red pepper flakes, or to taste
2 to 3 tbsp. olive oil
Add oil to skillet over medium high heat. When oil is hot, add broccoli and sauté broccoli with garlic and pepper flakes for 1 minute. Season the broccoli with salt and pepper.
Pour enough water to just cover the bottom of the pan, about 1/4 cup to 1/3 cup water. Cover and cook broccoli until tender crisp, about 5 minutes. Serve immediately.
Yield: 4 to 6 servings.
