A simple and refreshing drink for a hot summer day.
1 cup packed fresh mint leaves
2 tbsp. sugar
1 piece lemon peel, (about 1/2-inch x 2-inch)
2 cups boiling water
2 cups cold water
Ice
Lemon slices, for garnish
Mint leaves, for garnish
Fresh squeezed lemon juice, to taste (optional)
Place the mint leaves, sugar and lemon peel in a large measuring cup or pitcher. Add boiling water. Stir and let steep for 10 minutes. Add 2 cups cold water. Chill in fridge for 1 hour. Strain.
To serve, add ice and garnish with fresh mint and lemon slices. If desired, add a squeeze of fresh lemon. Makes 4 cups.
Yield: 4 servings.
