We know you might not want to think about summer ending; the days getting shorter, nights colder, and especially the fun being over part! Whether or not you have school-aged kids, you might feel like September heralds a return to routine. For many it means getting back on track with your cooking too. If you're thinking about making dinners healthier and packing lunches you'll look forward to eating, we have a 2-in-1 solution for you. Add seafood to your salads!
Fish is generally regarded as a healthier protein than some others and we have some delicious ways for you to work it into your weeknight menu. The recipes below are straightforward, light but full of flavour. So much so that you will want to eat them again the next day. And you can, at lunch! These salads are also particularly hearty and you can simply reserve some undressed salad for the top of your lunch portion, to be dressed and tossed right before you eat. You won't be tempted to ditch your lunch for a food court option when it looks as good as the cobb salad pictured above.
Our last tip? Pack a little extra. Someone at work is going to ask to try some.
