We're big fans of jams, chutneys, pickles and the like. You only have to pickle lemons once to know how a it turns something you would never have bitten into before into something you can't get enough of. Plus these processes let us stretch our enjoyment of summer's sweet berries or fresh cukes and tomatoes a little longer. You're preserving the ingredient and your enjoyment of this lovely season!
If you're new to the game, you could always start with a quick preserve of lemons or cucumbers that require no canning. Or how about simply drying the last of your fresh garden tomatoes in a low oven to have for pastas for another month more? If you're into it, you can go ahead and jar the puree of bushels of tomatoes, like Stefano's family does, using their very recipe. It's a great project for a late summer weekend and you'll thank yourself for doing it all winter long.
