Excuse us for getting a little zealous here. It's this time of year that brings out the fan in us. The one that wait excitedly for tomatoes in the last days of August, makes us romantic about peas that roll out of pods in early June, and fried zucchini blossoms--we're too busy stuffing our mouths to say much about those.
But in mid-summer, we stop daydreaming and start chopping. You can get lettuce year round but it never tastes like this--which is to say, like lettuce and not simply water. You can get a rainbow of peppers and radishes, summer squash in a dozen shapes and sizes. It's enough to make us want to make salads the centre of the meal. Like a towering, crunchy layered salad, or a salad wrapped in salad, or a salad of peas, with pea shoots on pea pods. You get the idea. These are the over-the-top salads that we think everyone must make right now! While you can!
