We all love having a bit of fun "in the kitchen", but sometimes - especially on weeknights - you may be too busy to afford the time to cook. That's when it's important to know when and how to stretch your leftovers from a previous night's meal. With little effort, you can transform them into a new creative dinner, and quickly too.
The best way to do this is to think BIG. Make extra Chicken Parmigiana tonight so you'll already have what you need to make Stefano's Chicken Parmigiana Muffuletta tomorrow. Make a double batch of Stefano's Mom's Meatballs one night, and pile the extras into a big, big sandwich the next. (And psst! You can catch Stefano and his Mom cooking together here!)
Plain old leftover ingredients can be the key to quick dinners too: stale bread is perfect for Panzanella Salad, or ground coarsely for breading these Veal Cutlets or Pecan-Crusted Baked Fish. And roast beef scraps make killer tacos or a salad that carnivores can get behind too.
