Serve this tasty slaw with seafood.
1 cup grated carrot (about 2 carrots)
1 cup mayonnaise
1 garlic clove, minced
1 tsp. lemon zest (optional)
2 tbsp. lemon juice
1 small pickle, finely chopped (about 1/4 cup)
2 tbsp. capers, chopped
Hot sauce, to taste
1 tbsp. chopped parsley
Salt and freshly ground pepper, to taste
Add grated carrot, mayonnaise, garlic, lemon zest, lemon juice, pickle, capers, hot sauce, parsley and salt and pepper to medium bowl. Toss to combine. Taste and adjust for seasoning.
Yield: 4 servings.
