Serve this Green Goddess Dressing over your favourite tossed salad, as a sauce for fish or a dip for veggies.
1 cup baby spinach
1 cup watercress
1/3 cup chopped mixed herbs such as parsley, chives, tarragon, mint and/or basil
1/3 cup olive oil
1 to 2 anchovies, mashed or to taste
1 clove garlic, minced
1 1/2 cups mayonnaise
Juice of 1/2 lemon, or to taste
Salt and freshly ground pepper, to taste
Add spinach, watercress, mixed herbs, olive oil, anchovies, garlic, mayonnaise, lemon juice, salt and pepper to food processor or blender. Pulse until smooth, adding a little water if dressing is too thick. Taste and adjust seasoning.
Yield: About 4 cups.
