Papaya Black Bean Salsa

Papaya Black Bean Salsa

Serve this spicy tropical salsa with roast pork, grilled chicken or broiled fish.


INGREDIENTS

1 (14-ounce) can black beans
1/2 small red pepper, diced
1/2 small red onion, diced
1 habanero chile or jalapeno pepper, or to taste
1 small papaya (about 1 1/2 cups)
Juice of 1 to 2 limes
2 tbsp. chopped cilantro
Salt, to taste


PREPARATION

Combine black beans, red pepper, red onion, habanero, papaya, lime juice, cilantro and salt. Taste and adjust for seasoning.



Yield: About 3 1/2 cups.
