These Lemony Greens with Mushrooms are a welcomed side dish for roast beef, chicken or pork.
3 tbsp. olive oil
1/2 pound mixed mushrooms, sliced, such as cremini, shiitake, Portobello, oyster
Salt and freshly ground pepper, to taste
2 cloves garlic, thinly sliced
1 bunch kale or Swiss chard, chopped into bite-size pieces
2 tsp. lemon zest (optional)
Juice 1/2 to 1 lemon
Add olive oil to large fry pan over medium high heat. When oil is hot, add mushrooms, and salt and pepper. Sauté until golden brown, about 3 to 5 minutes.
Add garlic, sauté until fragrant, about 1 to 2 minutes. Add greens. Sauté until tender, about 4 to 5 minutes. Season with salt and pepper. Finish with lemon zest and lemon juice. Stir.
Yield: 4 to 6 servings.
