Serve this fresh crisp salad with tacos, enchiladas or fajitas!
1 large head iceberg lettuce, sliced
4 to 5 radishes, cut into matchsticks or sliced
1/2 cucumber, cut into matchsticks or sliced
1 cup jicama, cut into match sticks
1/4 cup chopped cilantro
1 tbsp. lime zest
Juice of 2 limes
1 clove garlic, chopped
1/3 cup olive oil
Salt and freshly ground pepper, to taste
Add lettuce, radishes, cucumber, jicama and cilantro to large bowl. Set aside.
For the zesty lime dressing: Add cumin, lime zest, lime juice, garlic, olive oil and salt and pepper to small bowl. Whisk to combine. Taste and adjust for seasoning.
Toss dressing with salad just before serving.
Yield: 6 servings.
