Pizza-For-Breakfast Sandwich

Leftover cold pizza for breakfast is good but this grilled Pizza-For-Breakfast Sandwich is an even better way to start the day!


INGREDIENTS

2 leftover pizza slices, preferably square pieces
Handful arugula leaves
3 to 4 fresh basil leaves
2 to 3 slices mozzarella
2 slices cooked bacon
1 or 2 fried eggs, cooked to your preferred doneness
Olive oil, for drizzling
Hot pepper oil, for drizzling (optional)


PREPARATION

Preheat panini press according to manufacturer’s instructions.

Sandwich between pizza slices: arugula, basil, mozzarella, bacon and fried egg. Drizzle with olive oil or hot pepper oil.

Grill sandwich in a panini press until cheese melts and bread is toasted, about 3 to 4 minutes. Cut sandwich in half and serve.



Yield: 1 serving.
