Pineapple-Cucumber Salsa

Sweet and tangy, this fresh salsa is a nice alternative to tomato salsa on tacos, fajitas and burritos.


2 cups diced pineapple
1 cup diced English cucumber
1/2 cup diced red onion
1 jalapeno, minced or to taste
1/2 cup chopped cilantro
Juice of 1 to 2 limes
Salt, to taste
Pinch sugar


Add pineapple, cucumber, red onion, jalapeno, cilantro, lime juice, salt and sugar to bowl. Toss to combine. Taste for seasoning.

Yield: About 3 1/2 cups.
