Use this flavourful rub to season steaks, ribs or even chicken!
2 tbsp. coffee beans
1 tbsp. peppercorns
1/4 cinnamon stick, about 1-inch piece
1 tbsp. fennel seeds
1 tbsp. coriander
1 tbsp. brown sugar
1 tbsp. dried chili powder, such as ancho, pasilla or chipotle
1 tbsp. kosher salt
Add coffee, peppercorns, cinnamon, fennel seeds, coriander, brown sugar, chili powder and kosher salt to spice grinder or clean coffee grinder. Grind until coarsely ground. Use rub to taste on griled steaks, ribs or chicken.
Yield: Makes about 1/2 cup.
