They're coming! Those first local strawberries are about to hit the shelves and we want to make sure you're ready for them. Starting in June and carrying on throughout most of the summer, these little jewels are at their peak: juicy, refreshing and sweet.
With colourful bodies dotted with tiny edible seeds, strawberries are a perfect little treat eaten straight, but they're also ideal for boiling into jam, whizzing up for smoothies or piling onto pancakes and waffles.
They contain so much natural sweetness during the summer months that you don't need to do much to them. In fact, less is often more, like in these 'Martini' Strawberries where they're served in a pool of sweet vermouth for an easy and make-ahead summer-ready dessert.
Got extra strawberries? Wash them and lay them in a single layer on a baking sheet to dry. Then pop them in the freezer and once frozen, transfer them to a plastic bag and keep them in the freezer for smoothies any time.
