You don't even need a jam jar for this quick and easy Triple Berry Freezer Jam! For a quick dessert, slice a pound cake in thirds horizontally and layer with the jam. Serve with whipped cream and fresh berries.
2 cups mashed mixed berries (about 1 pint strawberries, 1/2 pint raspberries, 1/2 pint blackberries)
4 cups sugar
2 tbsp. lemon juice
1 tbsp. lemon zest or substitute lime or orange zest
Pinch ground allspice
3/4 cup water
1 (28.5 grams) pouch fruit pectin crystals
Combine mashed berries, sugar, lemon juice, lemon zest and allspice. Let sit for 10 minutes.
Add water and pectin to small saucepan. Bring to a boil and let boil for 1 minute, stirring constantly.
Stir into fruit mixture and continue to stir for 3 minutes.
Put into clean containers filling up to 1/2-inch from the rim. Cover with lids. Leave at room temperature until set, about 24 hours. Store in fridge for 3 weeks or freezer for 6 months.
Yield: About 4 cups.
