1 (4-pound) peameal bacon roast
3 tbsp. balsamic vinegar
3 tbsp. honey
3 tbsp. olive oil
Preheat oven to 375 degrees F.
Combine balsamic vinegar, honey and olive oil. Set aside.
Score peameal bacon roast. Drizzle with balsamic glaze. Transfer roast to roasting pan with foil.
Roast, basting occasionally, until internal temperature reaches 160 degrees F., about 1 hour 45 minutes to 2 hours. Tent with foil and let stand 15 minutes before slicing.
Yield: 8 to 12 servings.
