Jam-Layered Pound Cake

Here's a simple way to jazz up a pound cake.


1 pound cake, store-bought or homemade
1 cup Triple Berry Freezer Jam or substitute your favourite jam
1 cup whipping cream
1 tsp. lemon zest
Icing sugar, to taste
Fresh berries, for serving (optional)


Slice pound cake horizontally into thirds. Spread ½ cup jam over bottom layer of cake. Top with second layer of cake and spread with remaining 1/2 cup jam. Top with remaining cake layer.

Beat whipping cream until soft peaks form. Fold in lemon zest and sweeten with icing sugar to taste.

Slice and serve with whipped cream and fresh berries.

Yield: 12 servings.
