Warm Cabbage & Apple Slaw

Serve this sweet and sour cabbage side with grilled pork chops, schnitzel or Oktoberfest sausages.


3 tbsp. olive oil
1 large onion, sliced or chopped
1 clove garlic, chopped
1 small head savoy cabbage or 1/2 large, cored and sliced
1 tsp. caraway seeds
1 bay leaf
Salt and freshly ground pepper, to taste
1 apple, diced
1 tbsp. grainy mustard
1 tbsp. honey
1/2 cup beer
1/2 cup chicken stock
1 tbsp. apple cider vinegar


Heat large skillet over medium heat. Add olive oil. When oil is hot, add onions and garlic and cook, stirring occasionally until soft, about 5 minutes. Add cabbage, caraway seeds, bay leaf and salt and pepper. Cook, stirring occasionally until cabbage softens slightly, about 5 minutes. Add apple and cook for 1 to 2 minutes. Add grainy mustard, honey, beer, stock and cider vinegar. Cook, stirring occasionally until no liquid remains, about 10 to 15 minutes. Taste and adjust seasoning.

Yield: 4 servings.
