These tangy pickled red onions are quick and easy to make. Serve as topping for tacos, burgers, salads or Huevos Rancheros.
1 medium red onion, thinly sliced
Lime juice, to cover (about 2 to 3 limes)
Combine red onions, lime juice, sugar and salt. Let sit for 1 to 2 hours.
Yield: About 1 cup.
