Grilled Bratwurst with Warm Cabbage & Apple Slaw

Serve this German-inspired sandwich with ice cold beer and a side of potato salad.


Warm Cabbage & Apple Slaw
3 tbsp. olive oil
1 large onion, sliced or chopped
1 clove garlic, chopped
1 small head savoy cabbage or 1/2 large, cored and sliced
1 tsp. caraway seeds
1 bay leaf
Salt and freshly ground pepper, to taste
1 apple, diced
1 tbsp. grainy mustard
1 tbsp. honey
1/2 cup beer
1/2 cup chicken stock
1 tbsp. apple cider vinegar

4 bratwurst sausages (fresh)
4 sausage buns, for serving
Dill pickles, for serving
Roasted peppers, for serving
Hot banana peppers, for serving
Mustard, for serving


Warm Cabbage & Apple Slaw
Heat large skillet over medium heat. Add olive oil. When oil is hot, add onion and garlic and cook, stirring occasionally until soft, about 5 minutes. Add cabbage, caraway seeds, bay leaf and salt and pepper. Cook, stirring occasionally until cabbage softens slightly, about 5 minutes. Add apple and cook for 1 to 2 minutes. Add grainy mustard, honey, beer, stock and cider vinegar. Cook, stirring occasionally until no liquid remains, about 10 to 15 minutes. Taste and adjust seasoning.

Preheat grill to high.

Reduce heat to medium and grill sausages, turning occasionally until golden brown on all sides and cooked through, about 15 minutes.

Assemble bratwurst in bun and top with Warm Cabbage and Apple Slaw. Serve with dill pickles, roasted peppers, hot banana peppers and your favourite mustard.
