With caramelized onions, aged cheddar cheese and apple slices, the humble grilled cheese sandwich is transformed into gourmet fare!
8 slices bread, preferably rustic country-style bread
4 tbsp. butter
About 1/2 cup to 3/4 cup caramelized onions
4 thick slices aged cheddar cheese
2 apples, thinly sliced
4 handfuls baby arugula
3 tbsp. olive oil
1 1/2 tbsp. balsamic vinegar
Salt and freshly ground pepper, to taste
Creamy Tomato Soup, for serving (optional)
Assemble 4 sandwiches with caramelized onion, cheese and apple slices. Butter the outer sides of the bread slices.
Heat a large frying pan over medium heat. Add sandwiches (in batches if needed) and cook until bread is golden brown and cheese melts, about 3 to 4 minutes per side. If needed, finish sandwiches in a preheated 350 degree F. oven to melt the cheese.
To make a quick arugula salad: Drizzle arugula with olive oil and balsamic vinegar. Season with salt and pepper and toss to combine.
Serve grilled cheese sandwiches with arugula salad and/or Creamy Tomato Soup.
