Cauliflower 'Couscous'

With apples, mint and almonds, this fresh and light Cauliflower 'Couscous' is a quick no-cook vegetable side dish.


1 head cauliflower
2 to 3 tbsp. apple cider vinegar
1/3 cup olive oil
1 small garlic clove, minced
1/2 fresh red finger chili, finely chopped
1 tsp. curry powder, or to taste
Salt and freshly ground pepper, to taste
1 Granny Smith apple, diced
2 green onions, sliced
1/4 cup toasted slivered almonds
1/4 cup raisins
1/3 cup mint, chopped
1/2 fresh red finger chili, finely sliced, for garnish (optional)


Cut cauliflower into florets.

Add florets to food processor, pulse until the size of grains of couscous. Set aside.

Combine apple cider vinegar, olive oil, garlic, chopped chili, curry powder, and salt and pepper to large bowl. Add cauliflower ‘couscous’ and toss to coat. Add apples, green onion, almonds, raisins and mint. Toss to combine. Garnish with sliced red chilies, if desired.

Yield: 4 servings.
