These sweet treats are called Whoopie Pies because they are so delicious, after you take one bite, you will surely shout with delight, "Whoopie!"
1 3/4 cup flour
3/4 cup cocoa powder
1 tsp. baking powder
1/2 tsp. baking soda
Pinch salt (optional)
1/2 cup + 2 tbsp. butter (unsalted)
1 1/4 cup white sugar
1 cup buttermilk or 1 cup milk + 1 tbsp. vinegar or lemon juice
2 cups marshmallow spread
1/2 cup butter, room temperature
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment.
Add flour, cocoa powder, baking powder, baking soda and salt to medium bowl. Whisk to combine. Set aside.
Cream butter and sugar until light and fluffy, about 3 minutes. Add egg. Beat until light and fluffy. Alternate, adding flour mixture and buttermilk, in 2 additions.
Add heaping tbsp. of batter to prepared baking sheets, leaving 2-inch space between cakes. (Makes about 24 whoopie pie halves.)
Bake until tester comes out clean when inserted into centre of cake, about 10 to 12 minutes. Let cool completely before filling.
Evenly sandwich the marshmallow filling between 2 whoopie pie halves.
Beat marshmallow spread and butter until light and fluffy.
Yield: 12 servings.
