Transform leftover angel hair pasta into a quick and simple dessert with these Sweet & Crispy Angel Hair Clusters.
2 cups cooked plain angel hair or vermicelli pasta
Vegetable oil, for frying
Maple syrup, for finishing
Handful chopped pecans, for finishing
Icing sugar, for for finishing
Pour enough oil into a heavy-bottomed saucepan to come about 2-inches up the sides of the pan. Heat over medium heat until hot but not smoking. Twirl about 1/3 cup to 1/4 cup angel hair pasta onto a fork and add it directly to the hot oil, let the pasta sit on the fork for a few seconds before releasing it off the fork using another fork. Continuing cooking pasta crisps until golden brown and crispy, about 30 seconds to 1 minute. Transfer clusters to paper-towel baking tray to drain.
Finish clusters with maple syrup and chopped pecans or a simple dusting of icing Serve warm. Makes about 8 to 10 clusters.
Yield: 8 to 10 servings.
