Rum Raisin Baked Apples

Stuffed with brown sugar, butter and cinnamon, these old-fashioned Rum Raisin Baked Apples are a comforting dessert especially on cold autumn days. If you want to omit the rum, substitute with additional apple juice.


6 Fuji apples
6 tbsp. to 8 tbsp. brown sugar
6 tbsp. butter
1 tbsp. cinnamon
Handful raisins or other dried fruit
Handful chopped walnuts, almonds or pecans
1/3 cup rum
1/3 cup apple juice
1/3 cup maple syrup
Whipped cream or ice cream, for serving (optional)


Preheat oven to 350 degrees F.

Without going all the way to the bottom of the apple, core each apple with melon baller. Set aside.

Combine brown sugar to taste, butter, cinnamon, raisins and walnuts. Fill centre of apples evenly with the brown sugar mixture. Add the apples to baking dish. Combine rum, apple juice and maple syrup. Pour over and around apples. Cover and bake, basting occasionally, until apples are tender, about 25 to 30 minutes.

Serve warm with whipped cream or ice cream, if desired.
