This easy but delicious side dish takes only minutes to prepare. Serve with baked pasta dishes, Sunday roasts or even grilled fish.
1 tbsp. olive oil
1 tbsp. butter
3 to 4 thin or thick slices of prosciutto, diced
2 green onions, chopped
1 (12 ounce) bag frozen peas, thawed
Pinch hot pepper flakes (optional)
Salt and freshly ground pepper, to taste
Heat olive oil and butter in skillet over medium heat. When oil is hot, add prosciutto and green onions. Fry until prosciutto is lightly golden, about 2 minutes.
Add peas and toss to combine. Season with salt and pepper, and hot pepper flakes, if desired. Cook until peas are heated through, about 3 to 4 minutes.
Yield: 4 servings.
