Greek-style yogurt is slowly taking over the dairy aisle. If you love its rich and creamy texture, you'll be happy to know that you can get the same result by simply straining regular yogurt. And when you make Greek-style yogurt yourself, you can tailor it to your own tastes by adding jam or homemade Lemon Curd and save yourself some money at the same time.
To make your own drained yogurt, line a sieve or colander with cheesecloth or two large coffee filters (one inside the other) and place it over a bowl. Fill the cheesecloth with a few scoops of regular plain yogurt and let it drain in the fridge for at least two hours. You can watch Stefano do this in the video here. The longer you drain it, the thicker it becomes. After 24 hours you'll have 'yogurt cheese', with a similar consistency to cream cheese and a healthy low-fat substitute.
