Simply cooked beans get the special treatment in this side dish. Everything really is better with bacon!
1 1/2 pounds green beans, cut into thirds, preferably runner beans
8 slices bacon, cut into 1-inch pieces
Salt and freshly ground pepper, to taste
Add beans to boiling salted water. Cook until tender crisp, about 3 to 4 minutes. Drain well.
Meanwhile, heat large sauté pan over medium heat. Add bacon and cook until lightly golden, draining fat, as needed.
Add cooked beans to bacon in sauté pan. Season with salt and pepper and sauté until beans are tender, about 3 to 4 minutes.
Yield: 8 servings.
