Rich and creamy, use this drained yogurt for sweet or savoury applications. It can be a stand in for sour cream, whipped cream or even crème fraiche.
3 cups plain yogurt
Cheesecloth or large coffee filters
Line a medium sieve with cheesecloth or 2 large coffee filters. Place the sieve over a bowl. Add yogurt and let drain in fridge until yogurt is thick, at least 2 hours but up 24 hours for super thick rich yogurt.
Yield: 1 1/2 to 2 cups.
