With pineapple, coconut and rum, this classic cocktail really is a taste of the tropics!
1 cup canned cream of coconut (sweetened)
1/2 cup chopped fresh pineapple
1/2 cup rum (white or dark rum)
Juice of 1 lime
2 cups crushed ice
Pineapple wedges, for garnishing
Maraschino cherries, for garnishing (optional)
Cocktail umbrellas, for garnishing (optional)
Add coconut cream, chopped pineapple, rum, lime juice and ice to a blender. Blend until smooth. Pour into 2 glasses. Garnish each with a wedge of pineapple, maraschino cherry and cocktail umbrella.
Yield: 2 servings.
