Packed with spinach, basil and cashews, this pesto is dairy-free! Use this versatile sauce to add instant flavour to pastas, salads, sandwiches, soups and pizzas.
1 cup packed baby spinach
1 small bunch basil
1/4 cup cashews
1 garlic clove
1 cup extra virgin olive oil
Salt and freshly ground pepper, to taste
Add spinach, basil, cashews, garlic, olive oil, and salt and pepper to food processor. Pulse until smooth, adding more olive oil, if needed, to make a smooth pesto. Taste and adjust for seasoning.
Yield: Makes about 1 1/2 cups.
