This light and airy Pear and Ginger Fool is an easy and elegant dessert.Pear Sauce
1 1/2 cup Pear Sauce (cooled completely)
1/2 cup Greek yogurt
1 tsp. vanilla
1 tbsp. rum (optional)
1 cup whipping cream, whipped
Honey, for drizzling (optional)
Finely chopped candied ginger or crystallized ginger
Ginger snap cookies, crumbled
Blackberries, for garnishing
Mint sprigs, for garnishing (optional)
Pear Sauce, yogurt, vanilla and rum to a bowl. Stir to combine. Fold in whipped cream.
Spoon into 4 serving dishes. Top with honey, candied ginger and ginger snap cookies. Garnish with blackberries and mint.
Yield: 4 servings.
