Baked on a cedar plank, this salmon is a show-stopper!
1 side fillet of salmon (about 1 3/4 pound to 2 pound piece)
1/4 cup apple cider or apple juice
2 tbsp. apple cider vinegar
2 tsp. chopped ginger
2 tsp. chopped thyme
2 tbsp. grainy mustard
1/4 cup maple syrup
2 tbsp. butter
Salt and freshly ground pepper, to taste
1 Granny Smith apple, cored and cut into 12 wedges
1 cedar plank, for baking salmon
Soak cedar plank in water for 1 to 2 hours.
Preheat oven to 400 degrees F. Line a baking sheet will foil and place in oven to catch any drippings from the salmon on the cedar plank.
Add apple cider, apple cider vinegar, ginger, thyme, grainy mustard, maple syrup and butter to small fry pan or saucepan. Heat over medium heat and reduce until lightly syrupy, about 3 to 5 minutes.
Brush salmon with glaze. Season with salt and pepper. Place on cedar plank along with apples wedges.
Bake salmon until just cooked through, about 20 to 30 minutes, depending on size and thickness of salmon fillet.
Yield: 4 to 6 servings.
