The classic combination of pineapple and ham is made even better with the addition of bourbon. You can find ham steaks at the meat counter or ask the butcher to cut a few thick slices of ham for you.
4 ham steaks (about 1/2-inch to 1-inch thick)
4 fresh pineapple rings
2 tbsp. butter
1/4 cup brown sugar
2 tbsp. Bourbon or whiskey
2 tbsp. pineapple juice
Lots of freshly cracked black pepper, to taste
To make the glaze: Add butter, brown sugar, bourbon, pineapple juice, salt and pepper to small saucepan. Bring to a boil over medium heat. Remove from heat.
Preheat grill to medium high. Brush grill with oil.
Add ham steaks and pineapple rings to grill. Cook both ham and pineapple just until grill marked, about 3 to 4 minutes per side. Remove pineapple from grill. Brush the ham steaks with the glaze, cook for another 1 to 2 minutes per side.
Yield: 8 to 10 servings.
