Drizzled with spiced honey, this simple Citrus Carpaccio is a light dessert to finish a hearty meal.
1 large orange
1 ruby red grapefruit
1/2 cup honey
1/2 vanilla bean
1 cinnamon stick
1 tsp. fennel seed
2 tbsp. chopped pistachios, for garnishing
Mint leaves, for garnishing
Peel orange and grapefruit. Cut into crosswise slices and remove any seeds. Set aside.
Add honey, cinnamon stick, vanilla bean, and fennel seeds to small saucepan over low heat. Heat until honey is thin, syrupy and fragrant, about 5 minutes.
Meanwhile, arrange orange slices on platter. Drizzle with honey syrup. Garnish with pistachios and mint.
Yield: 4 servings.
