Make extra baked potatoes just so you can make these spiced home fries for breakfast the next day!
3 large russet potatoes
2 tbsp. olive oil
1 garlic clove, chopped
1 small onion, diced
1/2 red pepper, diced
1/2 green pepper, diced
3 tbsp. butter
1 tsp. Cajun seasoning, or to taste
Salt and freshly ground pepper, to taste
1 tbsp. chopped freshly thyme
2 tbsp. chopped fresh Italian parsley, for finishing
Preheat oven to 350 degrees F.
Pierce potatoes with fork. Bake potatoes until tender, about 1 hour. (This step can be done the day before.) Cool completely. Dice potatoes, leaving the skin on.
Heat large cast iron fry pan or large non-stick skillet over medium heat. Add olive oil. When hot, add onion, peppers and garlic. Sauté until veggies have softened, about 3 to 5 minutes. Add butter and potatoes, Cajun seasoning, salt and pepper and thyme. Cook, stirring occasionally, until potatoes are golden brown, about 10 to 12 minutes. Finish with parsley.
Yield: 6 to 8 servings.
