Buffalo Chicken and Blue Cheese Hoagie

This spicy chicken sandwich with blue cheese sauce and all the fixings is a take on pub-style Buffalo chicken wings. Serve with carrot and celery sticks or potato chips.


INGREDIENTS

Buffalo Chicken Sauce
2 tbsp. butter
1 cup barbecue sauce
2 tbsp. to 1/4 cup hot sauce, to taste

Blue Cheese Sauce
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup to 1/2 cup crumbled blue cheese
1 tbsp. chopped chives

Assembly
4 chicken breasts
Salt and freshly ground pepper, to taste
2 tbsp. olive oil
4 Stefano’s Bread Buns, sprinkled with sesame seeds
8 lettuce leaves
8 tomato slices
8 red onion slices
8 slices bacon
Celery and carrot sticks, for serving


PREPARATION

Buffalo Chicken Sauce
Add butter, barbecue sauce, hot sauce to small saucepan. Heat over medium heat until just boils.

Blue Cheese Sauce
Combine mayonnaise, sour cream, blue cheese and chives.

Assembly
Preheat grill to high.

Pound chicken to even thickness or cut in half.

Season chicken breasts with salt and pepper. Drizzle or brush with olive oil. Grill until just cooked through, about 3 to 4 minutes per side. Dip chicken in Buffalo Chicken Sauce.

Assemble chicken in buns with the blue cheese sauce, lettuce, tomato, onion and bacon. Serve with carrots and celery sticks.
