Beer-Battered Onion Rings

Bet you can't eat just one! Lager beer gives this beer-batter a light taste and airy texture. If you prefer a deeper flavour and colour, go with an ale or stout.


Beer Batter
1 1/2 cups all purpose flour
1 tsp. salt
1 tsp. baking powder
1 (12-ounce) bottle lager beer

Vegetable oil, for frying
2 vidalia Spanish onions, sliced into rings
Flour, for dredging
Salt, for seasoning
Spicy Mayo Dip (optional)


Beer Batter
In a large bowl, combine flour, salt and baking powder. Stir to combine. Whisk in beer. Let the batter rest 15 to 30 minutes.

Meanwhile, add oil to deep fryer or pour enough oil in deep saucepan to come 2 to 3-inches oil up sides of pan. Heat oil to 375 degrees F. over medium heat.

Dredge onion rings in flour, shaking off excess. Then dip into batter to evenly coat. Carefully add them to the hot oil, in batches, turning once. Fry until tender and batter is golden brown, about 3 minutes. Transfer to paper towels to remove excess oil. Makes about 20 onion rings.

Sprinkle with salt. Serve with Spicy Mayo Dip, if desired.
