Cooking eggs for a breakfast crowd is easy with these cheesy baked eggs.
8 small buns
1/2 cup grated cheddar cheese
8 tsp. butter
Salt and freshly ground pepper, to taste
About 1 to 2 tbsp. chopped chives, for garnish
Paprika, for garnish
Preheat oven to 350 degrees F. Lightly grease 8 cups in a muffin tin.
Slice tops off buns, reserve and toast separately under broiler until golden brown, about 1 minute, if desired.
Hollow out some of the bread from each of the buns, leaving about a 1/2-inch layer intact. (Use hollowed out bread to make bread crumbs, stuffing or bread pudding.)
Place each bun into a muffin cup.
Sprinkle 1 tbsp. cheese inside in each bun.
Crack egg into small ramekin or measuring cup and transfer to each bun. Add 1 tsp. of butter on top of each egg and season with salt and pepper.
Bake until eggs are set to your liking, about 20 to 30 minutes.
Garnish each egg with chives and pinch of paprika.
Yield: 8 servings.
